Crispy Wontons with Crab & Cheddar
Description:
Instructions: Fry wonton wrappers in 350° oil until light golden brown. Drain on paper and set aside. In medium bowl combine crab, celery, chives and lemon zest. Stir in mayonnaise, lemon juice and pepper. In small bowl, puree avocado pulp. salt, lemon juice and cream. Refrigerate until ready to use. For one serving: Preheat oven to 400°. Top each wonton with equal amount of crab mixture. Sprinkle each with 1 tablespoon shredded cheese. Place on baking sheet in oven and heat just until cheese is melted. Arrange wontons on a plate with a spoonful of avocado crème. Makes 10 appetizers (30 wontons)
