Crispy Wontons with Crab & Cheddar

Instructions:

Fry wonton wrappers in 350° oil until light golden brown. Drain on paper and set aside.

In medium bowl combine crab, celery, chives and lemon zest. Stir in mayonnaise, lemon juice and pepper. In small bowl, puree avocado pulp. salt, lemon juice and cream. Refrigerate until ready to use.

For one serving:
3 wonton wrappers
¼ heaping cup crab mix
3 tablespoons shredded cheese
1 tablespoon avocado crème
chopped chives for garnish

Preheat oven to 400°. Top each wonton with equal amount of crab mixture. Sprinkle each with 1 tablespoon shredded cheese. Place on baking sheet in oven and heat just until cheese is melted. Arrange wontons on a plate with a spoonful of avocado crème.

30 3" round won ton wrappers
oil for frying
20 ounces crab meat, well drained
¾ cup minced celery
3 tablespoons minced chives
4 teaspoons lemon zest
¾ cup mayonnaise
2 tablespoons lemon juice
¼ teaspoon black pepper
8 ounces Tillamook® Medium Cheddar Cheese, shredded (2 cups)

Avocado Crème:
½ cup avocado pulp
¼ teaspoon salt
1 tablespoon lemon juice
¼ cup cream
