Savory Tart with Tomato and Pesto and Cheesy Custard
Description: This recipe is displayed on the back of our new Tillamook 8 oz. Mozzarella Shredded Cheese package.

Instructions:
Preheat oven to 400ºF. 

Line 9" tart pan with dough and remove excess from sides. Chill 30 minutes. With fork, prick bottom of pie shell. Bake 10 minutes until crust is light golden brown. Let cool.

Reduce temperature to 375°F

In medium bowl with pour spout whisk together eggs, cream, parmesan, salt and pepper; set aside. Spread pesto over bottom of crust and then sprinkle with cheese. Working from the outside in, overlap tomato slices in concentric circles, covering crust completely. Pour custard over tomatoes. Bake 35-45 minutes until custard is set. Let sit 15 minutes before serving.

1 unbaked prepared pie crust
3 large eggs
1/3 cup cream
1/4 cup shredded Parmesan cheese
1 teaspoon salt
1/8 teaspoon ground pepper
1/4 cup pesto
1 cup (4 ounces) Tillamook® Shredded Mozzarella Cheese
7 Roma tomatoes, cored and cut into 1/4 inch slices
