Tillamook Smoked Cheddar Biscuits w/Crisp Bacon and Apricots
Description:
These wonderful, smoky biscuits accompany a hearty soup perfectly. Serve warm with plenty of fresh, sweet Tillamook® Butter. Submitted by Patty Cheng, Mountain View, Calif. - Tillamook Cheese Recipe Contest 2001
Instructions: Preheat oven to 425 degrees F. In food processor or mixer, combine flour, baking powder, sugar, salt and pepper. Add butter and pulse/mix until mixture resembles coarse meal. Transfer flour mixture to a large bowl. Stir in bacon, apricots and smoked cheddar cheese until well combined. Add buttermilk and stir until mixture just forms a dough. Gather dough into a ball and on a lightly floured surface knead gently 8 times. Roll or pat out dough to 1-inch thickness. Use a sharp, round cookie cutter to cut out biscuits from dough. Combine scraps and re-roll scraps and repeat process until you have used up the dough. Bake biscuits in middle of oven 15 minutes until tops are golden brown. Makes 8-10 snack size portions.
