Tuscan Panini

Instructions:

Butter the bottom of each bread slice and set, buttered side down, on a work surface. Drizzle each slice with about 1 teaspoon of vinaigrette and spread with 1½ teaspoons of pesto. On four of the slices arrange the red pepper, prosciutto and cheese. Top each with a slice of bread, buttered side up. Press gently.

In a heavy skillet over medium heat, cook the sandwiches until golden, about 2½ minutes per side.

Makes 4 sandwiches

Ingredients:
3 tbsp. Tillamook® Salted Butter, softened
8 slices rustic Italian bread
3 tbsp. balsamic vinaigrette
¼ cup pesto
¼ cup thinly sliced roasted red peppers
8 thin slices prosciutto or ham
1 cup (4 oz.) Tillamook® Mozzarella, shredded
