Vegetarian Quesadillas
Description:

The original finger food. Share it as an appetizer, serve it as a snack or make it a meal. Simple and perfecto!

Instructions:

Heat oil at low to medium heat in pan large enough to fit flat tortilla. Spread avocado, artichoke hearts and chilies evenly on tortilla, then add cheese.

Place another tortilla on top and brown as cheese melts. Flip tortilla over using large spatula and repeat heating process. Cut finished tortilla into 4 to 6 pie shaped pieces. Top with a dab of sour cream and salsa on each slice.

Serves 4.

Ingredients:
1 teaspoon oil
6–8 small flour tortillas
1/4 cup ripe avocado, mashed
1 cup artichoke hearts, chopped
4 tablespoons green chilies, sliced
8 ounce Tillamook® Special Reserve Extra Sharp Cheddar Cheese, shredded
1/2 cup Tillamook® Sour Cream
1 1/2 cups salsa
